Keep summer going all year long with this easy, quick, dinner-time favourite. The flavours of herbaceous, slow roasted chicken are paired with lime to give it a zing and elevate standard quesadillas. Make it extra special: add a little tequila along with the lime to the chicken. Sip on a Strawberry Margarita and give yourself a high-five for a dinner well-done!

Preparation
  1. Thinly slice pepper and onion. Place pepper, onion, and chicken in Multipurpose Steamer. Stir in seasoning. Cover and microwave on high 5–6 min, or until chicken is cooked through. Slice lime in half. Using 2-in-1 Citrus Press, squeeze in juice from 12 lime; stir to combine. Slice remaining 12 lime into wedges.
  2. In Sauté Pan, heat 12 tbsp oil over medium-high heat. Add one tortilla to the pan; spread with 14 of the cheese and 14 of the veggie and chicken mixture. Add second tortilla on top. Cook until golden brown, 1 min per side.
  3. Repeat with remaining tortillas. Slice tortillas into wedges and serve with lime wedges and additional toppings, if desired. 
Tips

Prepare quesadillas in the oven. Bake at 400° F on Sheet Pan lined with Sheet Pan Liner 10 min, or until cheese has melted and tortillas are starting to brown.
